For the warm vegetable salad with chickpeas and feta cheese, first preheat the oven to 200 degrees.

Peel the onion, cut into coarse pieces. Wash the remaining vegetables and cut them into not too small pieces.

Put the onion and vegetables in a baking dish and mix with 1 tablespoon of olive oil, salt, pepper and oregano. Roast in the oven for about 40 minutes until soft.

Rinse the canned chickpeas well and cut the cheese into small pieces. Make a marinade with the balsamic vinegar, salt, pepper, oregano, honey, mustard and 1 tablespoon of olive oil.

Put the vegetables in a bowl, mix in the remaining ingredients and the marinade and enjoy while still warm.
