Prepare the dumplings as described, boil in salted water, strain and rinse with cold water. Finely chop the onion and sauté in hot butter in a large frying pan until not too dark. Mix in the dumplings, season with salt and pepper and heat well. Add finely diced cheese, stir briefly and, as soon as it has melted, sprinkle with chopped chives. If desired, season again with freshly ground pepper and serve on warmed plates.
