For the Bookweeten-Janhinnerk put buckwheat flour, eggs, salt and coffee or tea in a mixing bowl. Add enough milk and water to make a thick dough. Cover and let rest for at least 2 hours.
Heat some clarified butter in a frying pan and fry the bacon strips in it.
Drop a ladleful of batter on top and let it set. Turn and bake briefly on the second side. Lift out and fry the rest of the pancakes.
Bookweeten-Janhinnerk are generously brushed with honey before eating.
