For the herb pancakes, first finely chop the fresh herbs. Mix all ingredients for the dough. Let rest briefly.
Heat a shallow pan and melt a little butter in it. Pour enough batter into the pan to thinly cover the bottom.
Bake the pancake over medium heat. As soon as the herb pancake can be shaken well in the pan, turn it over. Bake on the second side. Do the same with the rest of the dough.
