For the apple and celery raw vegetables, mix the crème fraîche with the mayonnaise and the balsamic vinegar. Season to taste with salt and pepper.

Wash and peel the celeriac and grate it directly into the sauce using a vegetable grater.

Wash the chives and cut them into fine rolls.

Quarter the apples, remove the core and cut into small pieces. Add to the sauce.

Serve the apple and celery raw vegetables sprinkled with chives.
