Chop the parsley and basil leaves and the olives.

Put them in a large enough bowl. Add mustard, crème fraîche (1), salt, olive oil, juice of one lemon, freshly ground pepper, coriander and cayenne pepper and mix well.

Add the tartar meat to the spice cream form and mix well. Season if necessary.

Form steaks from the meat dough and arrange on plates. Make an indentation in the center of each steak and pour in a tablespoon of crème fraîche. Cut the chives over the tartar with scissors. Serve immediately.

Serve with toasted pain or Paillasse farmhouse bread.

Our tip: It is best to use fresh herbs for a particularly good aroma!
