For the gooseberry vinegar, wash the fully ripe gooseberries, remove the stalk and flower head. Put them in a jar and pour vinegar (5-7%) over them.
Leave to mature for at least 2 months, then fill bottles and store in a cool, dark place. The berries can be added to the bottles or strained.
Shelf life of gooseberry vinegar is up to 2 years, depending on the acidity of the vinegar.
