Gooseberry Jam with Vanilla and Mint

*6 glasses ss 200 ml

Clean the gooseberries and chop them in a food processor (adding a sip of apple juice if necessary) and put them in a large saucepan with the jelling sugar. Chop the mint. Cut the vanilla pods lengthwise, scrape out the pulp and add to the gooseberries form, add the pods as well.

Stir the mixture for four minutes, adding the mint at the very end. Make a jelly test. Pour the hot jam into clean twist-off jars (place a damp tea towel underneath so that the jars do not crack) and seal them on the spot.
