First, prepare the chard leaves and cook them like spinach leaves – i.e. blanch them.

After boiling, briefly rinse in cold water, drain and finely weigh or strain.

Prepare a light roux with flour and butter, deglaze with water. Add the chard, pour in water or milk, season and cook briefly.

Serve in white butter sauce or hollandaise sauce.
