For the cantuccini, sift flour, cinnamon and baking powder into a large enough bowl. Add powdered sugar, butter, egg, vanilla sugar, 1 pinch of salt and almond kernels.

Knead everything together with the dough hook of the mixer until smooth. Shape into a ball and chill, wrapped in plastic wrap, for 20 minutes.

Shape the dough into three rolls, each 20 cm long, chill for another 1 hour. Place the dough rolls on a baking sheet lined with parchment paper.

Pre-bake in the heated oven at 180 °C (gas 2-3, convection oven 160 °C ) on the 2nd rack from the bottom for 15 minutes, let cool.

Cut the rolls into 1 cm wide, diagonal slices. Place flat once more on baking sheets lined with parchment paper and bake at the same heat for another 15 minutes. Allow to cool.

Store between parchment paper in a tightly closing tin.
