This dessert is known as the “Rice Pudding of the Eight Treasures” or the “Eight Jewels” or even the “Eight Jewels” because the pattern on it is made in China of eight different dried or candied fruits and nuts – for example. dried lotus seeds, candied red or green plums, pitted dragon eye nuts, watermelon seeds, pickled dates, dried bubble cherries, candied orange peel, candied red or green cherries, and blanched walnuts.

The type described here is served only with pitted dates, dried bubble cherries and candied cherries.

Cover the long-grain rice with cold water in a large baking bowl and swell for 2 hours.

Melt the lard in a 30 cm ø wok or a 25 cm ø handle pan over medium heat. Add minced dates and red bean paste and make over low heat for 20 min, stirring frequently, until the mixture begins to separate from the sides of the frying pan.
