Try this delicious pasta dish:

Prepare a smooth dough with eggs, flour, salt and water, add the strained liver and beat the dough until it bubbles.

Cover and let rest for 30 minutes.

In a high pot, boil water with salt and scrape the dough in small portions from a damp board with a kitchen knife in thin strips i boiling water. When the sparrows appear on the surface of the boiling water, lift them out with a skimmer.

If you want the sparrows to be clear and clean, boil them in fresh salted water before serving them again. Then drain and baste with brown butter.
