Pear Potatoes with Green Beans

For pear-pear with green beans, bring wine, sugar, star anise and saffron to a boil. Peel the pears, cut them into six and pit them. Steep in the spiced stock for 10 minutes at medium temperature and then let cool.

Coarsely chop herbs. Roughly chop pine nuts and garlic, puree with 150 ml oil and salt in a tall container with a hand blender. Add herbs and blend thoroughly. Cover and refrigerate.

Wash the green beans, remove the stalks and cook in boiling salted water for 8-10 minutes. Cool and drain. Brush potatoes, cut in half if necessary, and cook (or steam) in boiling hot salted water for 20 minutes, drain and let steam out.

Heat remaining oil in a frying pan. Sauté beans and potatoes in it for 5 minutes, season with salt and pepper. Strain pears and add.

Cover the pears and potatoes with the pesto and serve.
