For the napkin dumplings, cut the bread into small cubes and mix well with the eggs and milk. Let the mixture stand for about 1 hour so that the bread cubes can absorb the milk well. In the meantime, fry the onions and parsley in the oil and add to the mixture. Season with salt. Spread the mixture on a plastic wrap and form into a roll. Roll up the cling film with the roll and seal the ends on both sides. Simmer the napkin dumplings in lightly simmering water for about 30 minutes.
