Rinse the apple, rub dry, peel and core. Cut into thick slices and sprinkle with juice of one lemon.

Whip the cream until stiff and carefully fold in the cranberries.

Cut matie fillets in half lengthwise, roll up, place on apple slices. Fill with cranberry cream and decorate with a small blob of cranberries.
