Instructions:

For the napkin dumplings, first finely dice the onion. Heat the butter in a hot pan and sauté the onions until golden brown.

Chop the parsley. Whisk milk with eggs, salt and nutmeg. Mix everything with the bread cubes and let it stand for about 45 minutes.

If necessary, add a little more milk if the mixture is too dry. Brush a cloth napkin or a clean kitchen towel (washed without fabric softener!!!!!) in the middle with a little butter.

Spread the dumpling mixture on top and roll up, folding in the sides. Cook in a wide pot in boiling salted water for about 45 minutes.

Unwrap and portion.
