For the apple strudel in a glass, preheat the oven to 180°C. Prepare 6 dessert glasses.
Divide cookie crumbs evenly among the glasses, cover their bottoms evenly and place a small flake of butter on each.
Finely dice apples and mix with remaining ingredients and season to taste. Divide apple filling into glasses (fill with gupf).
Cut puff pastry over glass size, cover glasses with it and press down on glass. Put the apple strudel in the oven until the puff pastry is golden brown and nicely risen (about 10 minutes) and serve with vanilla ice cream or vanilla sauce.
