Peel and finely dice the onions. Cut the bacon into small cubes as well (if you haven’t already bought it in cubes anyway). Heat clarified butter or oil in a 9-liter pot and brown the onions and bacon.
In the meantime, peel the potatoes and cut them into bite-sized pieces.
Dust the onions with the flour, add the tomato paste and paprika powder and sauté briefly. Extinguish with about 1 liter of water. Chop the tomatoes and add them.
Add the potatoes, bring everything to a boil and simmer for about 20 minutes. Then add the green beans and cook for another 10 minutes.
Season with salt, a few dashes of vinegar, a little sugar and plenty of savory.
