Peel the zucchetti and cut away the stalk. Halve the fruit lengthwise and cut into small cubes. Place in a saucepan and add water. Add olive oil, peeled and crushed garlic cloves and a little salt and pepper. Bring to the boil and simmer on low heat for ten minutes.

Then carefully mix in the apple cider vinegar and the cumin. Continue cooking in an open saucepan until the liquid has boiled away. Make sure that the vegetables do not stick to the bottom of the pot.

Tip: Zucchini are a type of pumpkin and therefore low in calories, rich in vitamins and easy to digest – just the thing for a light meal!
