Spice bread:

(duration of preparation 10 min, baking time 45 min) Bring water to boil, let honey and yeast melt in it. Put the flour in a suitable bowl, make a hollow. Add the sugar and the hot liquid. Mix everything on the spot, stir in bitter orange zest. Butter a loaf pan about 30 cm long, pour in the batter (only up to half the height of the pan) and bake at 180 °C for 45 min.

Preparation of the Bresse chicken:

(duration of preparation 20 min, cooking time 1 hour half an hour) For the morels: soak the mushrooms in a little bit of lukewarm water for 15 min. Now let it bubble once. Drain the morels, collecting the liquid. Rinse the mushrooms under running water, cut the earthy feet into small pieces and remove any dirt such as stones from the mushroom body, then drain the mushrooms on a kitchen towel.

Cook the chicken:
