Instructions:

Preheat the oven to 180 °C.

Cut the peppers into quarters, place them skin side up on a baking tray and brown them in the oven. Then place the peppers in a glass bowl for about 15 minutes and cover with plastic wrap. When they have cooled a bit, peel off the skin and remove the seeds.

Also place the zucchini on the baking sheet, drizzle with olive oil, sprinkle with cinnamon, salt and pepper and bake in the oven for about 25 minutes.

Meanwhile, mix the ingredients for the dressing. To serve, place the zucchini, green beans, onions, and bell bell pepper quarters on a serving platter, top with the feta, pomegranate seeds, and dressing, and garnish the salad with parsley.
