For the Sweet Potato Skins first preheat the oven to 200 °C. Cover a baking tray with baking paper. Prick the sweet potatoes several times and bake for about 40-50 minutes until they are soft. Allow to cool slightly. Turn the oven temperature down to 190 °C.

Cut sweet potatoes in half lengthwise. Scrape out the flesh with a tablespoon, but leave a thin edge. Do not damage the skins in the process. Drizzle the skins with a little oil and place in the oven for 10 minutes.

In the meantime, chop the mozzarella, crumble the feta, chop the olives and cut the jalapeños into rings. Stir in the pulp with 2/3 of the mozzarella and the jalapeños, add the olives and feta cheese. Add salt and pepper. Pour the mixture back into the sweet potato shells, sprinkle with the remaining mozzarella and top with jalapeños.

Bake for about 15 minutes until cheese is melted. Remove and drizzle the Sweet Potato Skins with a little olive oil before serving.
