For the Potato Skins, boil the potatoes in salted water with the skins on, let cool slightly and cut in half lengthwise. Using a spoon, scrape out the insides to make a hollow.

Divide the green and white parts of the young onion. Finely chop the white part and cut the green part into fine rings. Grate the cheese and mix it with the bacon and the white part of the young onion. If you like, you can also add back a little of the soft inside part of the potatoes. Season with salt and pepper.

Pour the mixture into the hollowed out potato halves and place in the oven for about 10 minutes at 180 °C with the grill function on the middle shelf. Be careful not to burn the cheese. Remove the potato skins and decorate with the green of the green onion.
