For the filling, chop the parsley finely. Finely dice the onion. Mix minced meat with a little bit of chopped parsley and the onion cubes. Season with salt, bell pepper and paprika.
Clean the cauliflower and put it in cold salted water for about 15 minutes. Score the stem crosswise. Spread seasoned ground beef mixture as deeply as possible into all openings.
Then cook cauliflower in enough boiling hot salted water for 15 min. until tender.
Peel and cook the potatoes.
For the sauce, melt the fat and sweat the flour in it until golden. Deglaze with milk and 1/4 l of the cauliflower broth (mass referred to 4 servings) and bring to a boil while stirring. Season with salt, pepper and a pinch of nutmeg.
Dice streaky bacon and cook in a frying pan until crispy.
Cut the cauliflower into slices and serve with the sauce and potatoes.
Garnish with parsley to taste.
