For the Moorish spiced pork, cut the pork into 2 cm cubes. Mix the remaining ingredients, except for half of the oil, in a large gratin dish. Add the meat and turn it several times in the marinade.

Cover and marinate in the refrigerator for 4-8 hours (or overnight).

Preheat the oven to high.

When the oven is hot, place the meat cubes on long metal skewers. Grease the broiler rack, then place the skewers on the hot broiler. Grill, turning, for a total of 8-12 minutes.

Brush occasionally with the remaining oil. When the meat is browned all over and cooked through, arrange the pork with Moorish seasoning and serve.
