Preheat oven in time to 175 °C.

Heat spinach, collapse, remove from heat, cool, squeeze.

Sauté onion in a little rapeseed oil, remove from heat, cool a little. Add spinach, mix.

Mix ricotta until creamy, add spinach and parmesan (I). Add eggs and egg yolks, season with salt and pepper. Gradually add flour until a firm dough is formed.

In a saucepan, boil two liters of water. With two spoons, form balls of the spinach mixture, place in the boiling water and cook until they float to the top.

Remove spinach balls from water with a skimmer and place in an ovenproof dish.

Form melted light butter over them, bake in the stove for 5 min.

Sprinkle with parmesan (Ii), bring to the table.
