For the wholemeal spelt pizza the quantity is for 2 kitchen trays! Dissolve the yeast in 2/3 of the water, add the olive oil. Mix the flour with the salt and add to the yeast mixture.
Add the rest of the water and knead in a food processor for a few minutes until you get a smooth dough that doesn’t stick.
It is best to let it rise for 2 hours in a warm place (preferably in a yeast dough bowl). Then divide the dough into 2 equal pieces and roll out on a baking sheet lined with parchment paper and top according to taste.
