For the coconut fruit muffins made with whole wheat flour, separate the eggs and beat the beaten egg whites with granulated sugar until stiff. Mix egg yolks, powdered sugar, vanilla sugar and whipped cream until creamy.

Mix in coconut flakes, some grated lemon zest and rum. Cut the nectarines into small diced pieces, cut the blackberries (who large) in half, grate the currant and mix everything into the yolk mixture.

Mix the wholemeal spelt flour with baking soda and stir it in. Finally, carefully fold in the beaten egg white. Pour the mixture into muffin tins (2-3 tablespoons) Makes 20 muffins.

Either line the muffin tin with muffin paper or grease and flour it. Bake at 170 °C convection oven for approx. 25 minutes.
