For the One Pot Pasta with Spinach and Parmesan, chop the garlic clove and shallot. Wash and pluck the basil leaves and set aside. Briefly toast the pine nuts in a pan without oil.
Put the pasta, frozen spinach, salt, shallots, the zest of half a lemon, pepper and garlic in a saucepan with 450 ml of cold water and the whipping cream. Bring to a boil once with the lid on.
Remove the lid and cook for 12 minutes over medium-high heat. Stir regularly during this process. Then taste the pasta and add 3-5 tablespoons of water if needed and continue to cook.
Stir in Parmesan cheese, allow to melt. Add pine nuts and basil leaves. Sprinkle the One Pot Pasta with Spinach and Parmesan with pine nuts, garnish with a basil leaf and serve.
