Preheat the oven to 180 degrees, roll out the dough and place it on a baking tray lined with baking paper. Sprinkle with almond leaves and bake for about 10-15 minutes, depending on the thickness of the dough.
While still hot, cut into rectangles with a sharp knife, let the Spekulatius cool and store in cookie tins.
