For the dill sauce, chop the dill tips. Heat beef broth, simmer 2 tablespoons dill tips in it for 10 minutes, pour through a fine sieve. Melt butter, sauté onion cubes in it, add flour and sauté briefly.

Pour in strained dill stock, stir well (whisk). Add whipping cream and simmer for 10 minutes without lid. Puree with a blender, strain through a sieve.

Stir sour cream into dill sauce, stir in remaining dill tips, season with salt, pepper, lemon juice and nutmeg.
