Rinse round grain natural rice and bubble in water and milk with a pinch of sea salt and grated lemon zest, swell for about 40 min. with mild energy.

Add a little natural vanilla and butter or half a cup of whipped cream.

Fill into deep plates or possibly dessert bowls, drizzle with 3 to 4 tablespoons of maple syrup, garnish with 1 to 2 tablespoons of cinnamon, 2 tablespoons of coarsely chopped hazelnuts and perhaps apple pieces.

Rice pudding can be served the same way with fruit sauces or fruit, or modified with almond kernels and raisins.

Smaller portions can be served as a dessert (8 to 10 people).

The recipe can then be refined with whipped cream.
