Cut bacon into slices, fry on both sides in a frying pan. Rinse chives and cut into fine rolls. Mix eggs with chive rolls, salt and pepper and fry in a frying pan. Remove skin from one apple, remove core and cut into slices. Form roastis on a baking sheet lined with parchment paper.

Layer bacon, egg and apple slices on top of röstis. Sprinkle with cheese and bake for 10 minutes in a heated oven at 200 °C (gas: level 3).

Rinse the remaining apples, cut them into quarters and place them in a star shape around the baked Rösti. Serve with a little bit of horseradish and a cool beer. Variation:

Rinse tomatoes, remove stalks and cut into slices. Place the Röstis on a tray covered with parchment paper and top each with a slice of cooked ham, tomatoes and Altenburger goat cheese. Season with salt and pepper. Bake Röstis in heated oven at 200 degrees (gas: level 3) for about 10 minutes.

Rinse chives and cut into rolls. Serve Röstis sprinkled with chive rolls.
