For the semolina pancake with ham and cheese, cut the ham into small cubes, heat the milk, add the semolina and bring to the boil, stirring constantly. Remove from heat, cover and let swell for 5-10 minutes, stirring occasionally.

Meanwhile, beat egg whites with a pinch of salt until stiff. Stir the semolina again. If it is too firm, stir in some more milk vigorously.

Now fold in the snow, the egg yolks and the ham and cheese and season with salt, pepper and nutmeg.

Melt the butter in a large pan (or 2 smaller ones), pour in the mixture and fry until golden brown. Divide once or twice, turn the pieces and bake until golden as well. Meanwhile, tear into smaller pieces.

Arrange the semolina pancake on warmed plates and sprinkle with chopped chives before serving.
