For the semolina flummery, finely chop nuts. Bring milk to a boil in a saucepan, add sugar, vanilla sugar and semolina and let it thicken while stirring constantly.

Add nuts, raisins and eggs, stir until smooth and finally stir in Maraschino. Rinse four ramekins with cold water and pour in the overcooled semolina mixture.

Press well together, smooth the surface and leave to set in the refrigerator for 3-4 hours. Then dip the ramekins in hot water and turn out the solidified semolina mass onto a prepared plate.

Garnish the semolina flummery with any fruit and serve well chilled.
