Parry the saddle of hare, i.e. remove excess fat and tendons and score lightly along the bone. If necessary, inject beforehand with a spice broth. Salt and season with pepper and sear on the meat, turn to the other side and after about 2 minutes put in the oven (approx.85 °C °) and rest. In this roast brown the finely chopped onions with the spices. After about 1 min. add the dried fruit. Add the tomato paste and extinguish with red wine. Add the strained tomatoes and boil down to a creamy sauce and season.

Put the back in the roaster and steam it for about 10 minutes with the lid closed. Separate the saddle of hare from the bone, arrange in fine slices on the jus.

Tip: Always use aromatic spices to refine your dishes!
