For the Mediterranean vegetable tortilla, peel and finely chop the onion and garlic. Remove peppers from seeds and septums and cut into small cubes or strips. Wash the zucchini and cut into small cubes.

Coarsely chop walnuts, wash and pluck or chop herbs.

Sauté onion and garlic in hot olive oil. Add peppers and roast until peppers are soft but still firm to the bite. Add zucchini cubes, pine nuts and walnuts and roast some more. Beat eggs and mix with herbs. Mix the vegetables with the beaten eggs. Season with salt and pepper. Pour into a small pan and fry slowly over low heat. Cover with a plate or lid. After about 5 minutes, turn and fry on the other side as well, until the bottom of the tortilla is also cooked and golden brown. Allow to cool slightly. Cut the Mediterranean vegetable tortilla into quarters or eighths and decorate with fresh herbs.
