Saddle of hare soak in buttermilk for one night. Rub dry, add salt, paprika and bell pepper. Cover with bacon slices, pin them with toothpicks.

Fry finely chopped onions, carrots cut into sticks, garlic clove and chopped celery in oil. Brown the saddle of hare, add broth and sauté for about 20 minutes.

Add mushrooms and tomato puree, heat, season. Keep warm until serving.
