For the pumpkin seed bread first crumble yeast and liquefy in water. Whisk flour with pumpkin seeds and salt. Mix the yeast mixture, add butter, curd and oil and knead the whole thing gently until smooth (best done in a food processor with dough hook).

Let the dough rest at room temperature with the lid closed for about 40 minutes, doubling its volume.

Butter a loaf pan (capacity about 1 3/4 liters). Knead dough on a floured surface, pour into the mold, sprinkle with pumpkin seeds and let rest for another 30 minutes. Preheat oven to 170 °C.

Bake the pumpkin seed bread in the oven (bottom rack) for about 45 minutes, let rest for 10 minutes, turn out of the mold and let cool.
