A great spinach recipe for any taste:
Beat eggs, salt and water with a mixer until blended but not creamy. Melt clarified butter in a non-stick frying pan. Pour the omelet batter into the heated but not browned fat form and cook on 1 or automatic cooking plate 4-5 until stiff. Slide the omelette onto a heated plate.
Finely mash the blue cheese with a fork, mix with whipped cream and port wine and season to taste.
In a second frying pan, heat the clarified butter on 2 or automatic cooking plate 4-5, pour in the spinach, collapse in 2-3 min, season with salt and pepper.
Add the cheese sauce and the spinach to the omelette.
