Finely slice the shallots. Heat the oil in a deep pan (or pot), add the shallots and fry for about 5 minutes. Add the crushed garlic and turmeric and sauté for about 30 seconds. Mix in the spinach leaves, sauté briefly, remove from heat and let cool. Transfer the spinach mixture to a stand mixer and slowly puree. Pour back into the pan. Pour in milk and soup as well and simmer everything for another 2 minutes. Add butter, nutmeg, salt and pepper to taste and cook for another 2 minutes. Divide a ladle of soup into bowls and garnish with a spoonful of sour cream.
