Mix the gelatine with 2 tbsp. cold water, let it swell, warm it up while stirring until it is dissolved. Beat the egg yolks, sugar and salt until thick and fluffy, add the juice of one lemon and Crea Sherry. Mix in gelatin and refrigerate.

Whip the egg whites extra, the whipped cream with the cream stiffener and sugar until stiff. Once the sherry mixture thickens, fold in half of the whipped cream and egg whites.

Pour the cream into a bowl, leave to cool and, just before serving, decorate with whipped cream and sprinkle with the seeds.
