For the minced meat roast with hard eggs, first soak the bread in water, squeeze. Chop the onion and bacon, finely chop the parsley and mix everything well with the mince. Season and bind with an egg.
Sprinkle breadcrumbs on a work surface and spread the mince on top. Place the hard-boiled eggs side by side in the middle of the mince (with a little space in between) and form a roll around them.
Heat some oil in a pan and fry the mince in it. Pour a little water over the mince and during the frying time keep pouring its own juice over the mince with hard-boiled eggs (if there is not enough juice, add more water).
