First, clean and chop the spring onion and sauté in clarified butter.

Chop the meatloaf in a food processor, add to the onions and fry well. Season with salt and herbs.

Add whipping cream and let simmer for a while.

In the meantime, cook any pasta you like, putting some pasta water on the side to thin, just in case.

Serve with grated Parmesan cheese.
