Sauté flour in melted butter. Pour milk, stir until smooth (tip: blender) and melt diced Bel, Emmental, Provolone Paese and grated Parmesan in it. Season with salt, pepper and a pinch of nutmeg. Clean the spring onions, chop them and stir them into the sauce (the greens at the very end, everyone knows).

Goes well with orecchiette, tortellini or tagliatelle. Here the 280 calories or 1180 joules per unit are no obstacle!
