For the Tomato Parmesan Risotto, place rice, water and tomato paste in a wide saucepan, stir and bring to a boil. Turn down to low heat and simmer. Stir now and then so that the rice does not stick.
Keep adding a little water until the rice is cooked soft.
Finally, stir in the Parmesan and zucchini and continue to simmer until the Parmesan has melted.
