For the foam rolls, roll out the puff pastry, cut into 14 cm long and 3 cm wide sheets.

Wrap the pastry sheets on foam roll molds and place on a baking sheet lined with baking paper.

Bake at 170 degrees for about 10 minutes. Then remove the rolls from the molds while they are still warm.

For the filling, mix the egg whites with the sugar and warm water in a whisking kettle and beat over steam until stiff.

Pour the mousse into a piping bag and fill the rolls with the mousse (piping from both sides to the center). Sprinkle with sugar.
