Instructions:

For the batter, cream butter with powdered sugar, vanilla sugar, cocoa, ginger and salt and slowly add the eggs.

Then fold in the flour. Fill the mixture into a piping bag with a nozzle and pipe dots onto a baking tray lined with baking paper.

Bake at 180 °C convection oven for 10 minutes.

For the filling, bring the whipped cream to the boil, remove the pan from the heat, stir in the finely chopped couverture and dissolve.

Let the cream cool in the refrigerator for half an hour and then stir until smooth.

Place two cooled cookies together with the filling and chill until the cream is firm.

For the decoration, melt the couverture over a water bath. Glaze half of the cookies with the chocolate coating and allow the chocolate to harden.
