Cut the bread slices into 4 pieces each and spread evenly on a serving plate. Whip the cream until stiff, fold in the grated walnuts and season with salt, pepper and cayenne pepper. Cut salmon slices into 24 pieces. Rinse fennel and grapes. Cut fennel into very thin slices on a cucumber slicer, coarsely chop fennel greens. Cut grapes in half, remove seeds with a sharp kitchen knife. 2.

Spread 1 dollop of walnut whipped cream evenly on each bread slice. Place fennel on top, evenly distribute salmon pieces on top. Arrange grapes and walnuts on top, garnish with fennel greens and fix with small skewers. Drizzle everything sparingly with juice of one lemon.

Slice thinly and take it out of the refrigerator 20 min. before serving. This way it can develop its aroma just right.
