Cut meat and bacon into large cubes, season weakly with salt and sufficiently with pepper.

Clean the vegetables and cut them into large pieces as well. Heat the butter in a saucepan, brown the bacon and beef in it. Add the vegetables and saute lightly. Dust with flour, deglaze with cognac and pour in the red wine. Peel the garlic, chop it finely and add it with the greens. Put a lid on and simmer gently at medium temperature for 1 1/2 to 2 hours. Remove the greens before serving.

Our tip: Use your favorite red wine for cooking!
